Of sour dough?
I have no issues with gluten but tend to overeat challah so I have matza. Someone told me to switch over the sour dough because it's so good for you.
Can someone explain the health benefits of sour dough vs something like matza?

The fermentation process means the very complex proteins in flour are already broken down so it is so much easier for your gut to digest and causes a lot less inflammation. Also a lot of the starches are broken down to resistant starch which has no effect on your blood sugar so overall it's lower glycemic.
