I think it’s basically food made from flour

The KVH has an entire list of breads that are certified pas yisroel (more extensive than ou). These breads are sold in stop&shop, whole foods, trader joes, and a few other stores. I am posting the link, if you scroll down to the bottom there is a list called certified products in kvh database. You can get some pretty good stuff. And it's also handy to have when traveling.

No, it has to be baked. Boiled items like pasta aren't in the category of pas.

Different cereals are processed different ways. And as mentioned up thread, it needs to have the tzura of pas... And there's machlokes on that.

If you hold that cookies need to be pas yisrael then these are not and they can’t be eaten.
They are delicious ( before we realized it was an issue ) though

There are actually a few items that are Pas Yisroel and they say so. The peanut butter cookies but don't think they have them anymore. Can't think of other items but I've bought more.

TJs buys products from other companies and rebrand/repackages with their own packaging so that's how they have Pas Yisroel items even though they are aren't a Jewish company.
