Sautéed mushroom and onion omelet.
Pita chips
Pizza and sunny side up eggs for kids who didn't want the above.
Was gonna make a salad but no one wanted.

Sunday:
Pizza & fries

Monday:
Zucchini soup
Tomato quiche
Fruit smoothies

Tuesday:
Split pea soup
Tuna arayes (recipe from last week's whisk)

Wednesday:
Ramen bowls with teriyaki salmon (I'll have soft boiled eggs bec I don't like fish)

Thursday:
I never make a normal dinner lol. so something easy

Sunday I will probably make nachos. Haven't worked out before fast meal yet but probably tuna patty burgers with the works. My kids will probably have fish sticks and fries.

Sure. It’s my favorite soup recipe!
Dice an onion very small and sauté in 3 T oil. When soft, add 3 crushed garlic and sauté another. 3 min.

Shred veggies in a food processor or grater.

I usually do:
4 large carrots
2 large zucchini
1 sweet potato
1 kohlrabi
1/2 red pepper
Sometimes I’ll dice up cauliflower and add that too.

Add the shredded veggies to the pot and sauté for 30-40 min on low, covered. This gives the soup a delicious flavor.

Add water to cover, (4-6 cups) a big handful of pearl barley or red lentils or both. Season with salt and paprika, (smoked paprika too if you have)

Bring to boil, then I cook it for 2-3 hours on low.

Tonight is veggie burgers for the adults and big kids. Fleshig leftovers for the baby and toddlers who don’t eat dairy. Anyone else who doesn’t like veggie burgers can make themselves a pizza bagel.

We don’t eat a lot of meat regularly during the week so 9 days doesn’t feel so hard in terms of that

So far we had sheet pan gnocchi with impossible meatballs, soup and lasagna, chickpea curry with rice and salad

We eat low carb so it’s not easy to come up with ideas. We had salmon patties and tuna patties yesterday and today, the sides were buckwheat and potatoes, veggie salad, cauliflower soup, green beans and corn. I have also made crepes with whip cream.

Tomorrow will probably be eggs.

Here's a cheap , fast and filling one:
White rice & black bean stir fry.

Fry and onion, add cans of black beans and cans of sliced green olives. Salt, pepper, garlic. Fry up for a few minutes.
Put rice, topped with beans mixture and cheese , melt in more rice for a minute.

It's really good. My kids love it and ask for it!
