Looking for a recipe for 100% whole wheat challah that uses little or no sugar or other sweetener. Prefer a recipe using about 4 cups of flour, but I can do the math if your recipe calls for more. TIA!

Not traditional challah but you can try a small batch of sourdough with ingredients being only flour water and salt.

You don't need sugar. The flour has plenty of sugar in it. try using 3x the yeast though for 100% whole wheat.

I may ultimately have to , but don't like the idea of having to care for a starter solution. Nor do I have the fridge space to devote to a starter. Tried it years ago and found it to be more trouble than it was worth.

Is the extra yeast compensation for the loss of sugar or for the density of WW vs. white flour? Because I already have recipes for WW challah, they just call for honey or sugar and I'm trying to reduce our sugar intake. Are you saying I could use the recipe I have and just skip the sugar?
