Looking for AUTHENTIC Israeli salad recipes.

2 large tomatoes
2 cucumbers
1 pepper
red onion (or scallions sliced, my preference)
all diced very small
juice from 1 lemon (2 tbsp lemon juice)
4 tbsp olive oil
fresh parsley
fresh mint
salt & pepper, to taste (lots of yummy salt)

Patch onto this sliced green olives
Optional: yellow pepper, shelled sunflower seeds, shelled pumpkin seeds

The lemon juice  . I had completely forgotten about it! The most Israeli original lemon juice is processed and from plastic bottle from the local makolet
