I opened it last week Tuesday, is it still safe to eat?
Also I wanna make pastrami borekas, can I freeze them once it’s in a pastry?

I don't think I would use it.
It's been a hot week where I live...
But if you get a new pack there's no problem freezing it in pastry. I do it with deli roll all the time.
