I had iPhone for years and never had this. I did the easy transfer.

on my old iphone I had this whenever the phone needed a rest. I turned it off for a bit then turned it back and all was good.

Maybe the swipe on keyboard option is on. Check the keyboard settings
By settings then keyboard switch off the slide to type option and see if that’s what your problem is

Call Apple Support - they are really fantastic at trouble shooting issues and unlike other places, if the person you reach can't solve the issue, they get a senior engineer to help solve.
It sounds like you inadvertently turned something on in the system. I had something weird on my iPhone some times ago (can't remember the issue) and we finally resolved it.
The great thing about Apple Support on the phone is that they can send something (with your permission) so that they can see your screen and so it is as if they are in the room with you because they will point an arrow at the place you might need to push.

Right, I was gonna type an example but of course my phone is behaving bh.
But sometimes
It would type like this. And add random t letters.
And go under when I didn’t press it.
