We are going away for Shabbos to a non-Kosher hotel. Please tell me what food we can take that'll be cold, easy to assemble yet still feel like a great meal.

We used to do this back when as single girls.

Challah
Humus (you can find shelf stable so you don't need as much fridge space)
Avocadoes (mash & season fresh- won't even need fridge).

Salad (bring mini bottle evoo and garlic salt) with vegetables brought along (lettuce only if you have fridge space). With halved hard boiled eggs garnished on top.

Cold cuts platter with challah for sandwiches or just on its own.

Friday night

Challah
Humus
Avocado

Smoked salmon platter (before meal roll up each slice of lox and make a platter with slices of tomatoes and kirbies in between each one).

Salad with cold sliced grilled chicken and meat that was prepared ahead of time at home, garnished on top. A good lemon/evoo dressing on top (bring a lemon to squeeze).
