I have a bunch of kids and then a bit of a break and then a 7-year-old son and a 5-year-old daughter. The two of them are very close with each other and are really like best friends. They play together and hardly ever fight and the older one looks out for the younger one. They tend to be very physical with each other, hugging constantly, lying on the couch one on top of the other, lying in bed together hugging, etc. It's completely innocent and really sweet. Should I just let it go or should I be interfering since they're getting a bit older?

I don't think you should put it on their radar, they are too young. It will likely come naturally with time that they self adjust.

Agree, I think they'll grow out of it naturally with time.

Let it go. Enjoy them. If it's still happening at age 9, start setting them up with their own friends or things to do.
