Me & dh
It’s gonna be just us.

We’ve been eating very healthy (no processed sugar or carbs) for about a year.

I don’t stick to the diet on shabbos completely but I don’t want to over do it

Any suggestions ? .

Milchig dishes can be land mines of carbs and sugar if you’re not careful. Maybe opt for parve as opposed to pasta, quiche and over-the-top cheesecake. Your bodies aren’t used to this if you’ve been careful for a year.

Are you doing meat or dairy? Are you ok with higher fat foods?

For dairy foods that are low-carb and not low-fat, I'd do crustless quiche (or you could make an almond flour crust) and a lasagna-type dish using slices of eggplant or zucchini instead of noodles, and low-sugar tomato sauce. You can also make a Mac and cheese using cauliflower instead of macaroni. Add a baked fish and a salad with a creamy dressing.

If you want to reduce the fats in those dishes you can use less cheese, focus on cottage cheese and feta cheese that are lower in fat.

For dessert you can have fruit with sour cream. Sprinkle with Splenda if that's your thing.

Slice small eggplants in half lengthwise. Make shallow cuts on the surface of the eggplant flesh, crosshatch style (going in both directions on the diagonal).
Brush with oil and sprinkle with oregano, garlic, salt and pepper; bake uncovered at 425 until softened and golden on top, 15-20 min (depending on size of eggplants).
Spoon marinara sauce over eggplant and sprinkle with cheese. Bake another 8-10 minutes, until cheese is bubbly and sides are starting to brown.
