Hi,
I'm wondering if anyone has any salmon recipe that I could make today and it will stay fresh for Shavuos. I guess it will have to be marinated. Bonus points if it doesn't have lots of sugar and can be made in the oven. Thanks!

I don't think any cooked salmon will be fresh is 6-7 days.

Pickled Salmon
4-6 slices salmon filet
1 cup vinegar
2 cups water
1 onion, sliced round
3/4 cup sugar
1 tbsp salt
6 bay leaves
1 tbsp. pickling spice
Put salmon in one layer in baking pan.
Put onion and sugar in a pot and cook on medium flame until sugar is dissolved. Add water, vinegar,
salt and spices (put in herb bag or wrap in parchment so it doesn’t stick to fish). Bring to a boil. Pour over salmon slices. Bake covered at 350 for 13-15 minutes. Store salmon in cooking liquid.
I find that it last around 1.5 weeks in a cold refrigerator.

I’m assuming this is the one I make and it lasts 10-12 days.
Cook fish on stovetop in plain water.
Transfer fish to new pan with sliced onion on bottom.
Cover with pink marinade:
1/2 cup sugar
1/2 cup vinegar
1/2 cup ketchup
1/2 cup mayo
Recipe is for 6-8 slices double or halve accordingly.

It’s not about the recipe, it’s about the salmon itself
Some stay fresher for longer, some don’t
Don’t make salmon today to eat on shavuos

Keeping cooked fish for a week? Doesn't sound safe to me. Can you make something and freeze it until then?

Marinated Salmon
8 Slices Salmon Fillet
1/2 C Vinegar
1/2 C Oil
1/2 C Lemon Juice
3/4 C Sugar
2-3 T Mayonaise
1 t Garlic Powder
1 t Salt
8-10 Allspice balls
Parsley Flakes (Optional)
Mix all ingredients.
Marinate for 48 hours.
Pour out half of marinade.
Bake covered for 30 minutes.
Uncover, bake additional 15 minutes.
Serve cold.
