why put in less yeast?

its not really for health.

soaking flour has health benefits but

I want to be able to use it in a way it should taste good , not heavy and dense.

by the way I am a serial junk eater. Smile

just love figuring out how to make real food wholesome but never compromise on taste.

I guess it seems obsessive cos I dont give up and figure it out it the end.
