can I cook them the way I do any steak?
I fry onions carrots - steam each piece till browned on either side, add water and spices and
cook till soft?

Do you mean lamb chops?
Good lamb chops are best cooked medium rare because they aren’t tough and don’t need to be steamed and braised like you want to do. Salt, pepper and garlic is all you need for flavor.
Cook them like a good steak which is also just seared on both sides to medium rare ideally. Te meat is tender and you spoil it by cooking for a long period of time and steaming it.

I think lamb cutlets are smaller.
I just let it sautee in the fried onions for a few minutes till it browns and then add water and spices.
I use paprika powder for steak could I use it for lamb too?
how does it spoil by cooking for long?
