Thanks for responding! Do you mind sharing a bit more what the work looks like, if it's freelance, structure of the work, background needed to do similar work, and why it's hard to find now?

It varies a lot, depending on which company you work for, which product you're creating/editing, and what your role is. A lot of these jobs are contract/freelance positions, and they pay relatively little, like $25/hour. They'll usually be for terms of 3 to 6 months.
As far as background, most recruiters/HR are looking for people who've been in teaching for a while and have a lot of experience creating content. For example, if you have units or assessments you've created, that can help a lot. A background in editing/English is very good too -- a number of my coworkers have English/Literature degrees as well. You have to show that you have excellent writing skills and an eye for detail.
These jobs are very much in demand right now (even the freelance ones) because of the sheer number of teachers who are transitioning out of the classroom. The best way to get a job at an edpub or edtech company now is to know someone else who has one and who can pitch you to their manager.
A good start would be setting up a presence on LinkedIn and connecting to people in the field.
