I had a recipe from a few years ago called Lori's Pesach bagels (from one of the magazines). I can't find it, does anyone have the recipe?
(or it was Pesach rolls? With Matzah meal).

Original Popover Pesach Rolls (Gebrokts)
1 1/3 cups boiling water
2/3 cup oil
2 tablespoons sugar
2 teaspoons salt
2 cups matzah meal
6 eggs
Preheat oven to 350° F.
In a small saucepan, combine water, oil, sugar and salt. Once boiling, add the matzah meal and continue mixing until uniform. Turn off flame. Add 1 egg at a time, combining well. Using greased hands, divide dough into 8 balls. Arrange on lined cookie sheets. Lightly flatten.
Bake for 40 - 60 minutes.
Best eaten fresh from the oven, or can be reheated in an oven the same/next day.
Matzah Rolls (Gebrokts)
2 cups matzah meal
1 cup boiling water
1/2 cup oil
1 tablespoon sugar
1 teaspoon table salt
4 eggs
Preheat oven to 350° F.
Mix matzah meal, sugar and salt in a bowl. Boil 1 cup water and 1/2 oil together and add to the dry ingredients. Add 1 egg at a time, combining well. Make into flattened balls, mark an x on each one, bake for 30 to 40 minutes.
Best eaten fresh from the oven, or can be reheated in an oven the same/next day.
Yield: 10 rolls
