Looking for easiest (relatively healthy and lite) coleslaw recipe (using homemade mayo).

Coleslaw needs some sugar to taste good but you can use a little 1/3 cup should be ok. Half cup mayo a bit of salt and vinegar

My standard recipe for a 16 oz bag of coleslaw:
1/2 cup mayo
3 Tblsp sugar
1 tsp salt
1/4 tsp white pepper
3 Tblsp vinegar
I find it works best to mix the mayo, sugar, and S&P together first and then mix in the vinegar.
You can also mix mayo and honey together to make a dressing. The flavors works better if you chop some green apple into the coleslaw. I like to make that for Rosh Hashanah for obvious reasons, but no reason not to make it for Pesach.
You can try a vinaigrette instead of a mayo based dressing. I don't have a particular recipe but it should be relatively simple to find online. Here are some I found with a quick search:
