I'd like to make this as a side dish, more of a kugel than a cake, with a nut crumb topping. Anyone have a recipe?

Sweet Potato Souffle
6 medium sweet potatoes, cooked and mashed
1/4 cup oil
1/2 orange juice
1/4 cup wine
3/4 tsp salt
3 eggs
Combine all ingredients. Place in a 9 x 13 pan. Bake in oven preheated at 375, for 1 and a half hours, uncovered.
Or spoon into muffin lined tins (needs to be served in the cupcake holder) and sprinkle with streusel crumb topping. Bake 45 minutes.
Streusel Crumbs
1 cup almond flour
3/4 cup potato starch
1/4 cup oil
6 tbep sugar
1/2 tsp cinnamon
Place all ingredients in a bowl and mix gently with your fingers until you get a nice crumb.

Can you also make these crumbs, and place them in a ziploc in the freezer (so we can make fresh apple crisp before Y"T)

I made it without the wine. I also added chopped walnuts to the crumbs, and used about 2T maple syrup instead of the sugar. They came out really good
