Now that we are empty nesters, it's so hard to get inspired for the two of us. We have company often and then I make nice meals but for two???

Canuk, since my dd is still too young to eat much I'm still pretty much cooking for 2 when I don't have company. I still have fun with the cooking though. I often make 1/2 a recipe if I know we aren't going to eat that much, or I'll freeze part of a recipe. It must be tricky getting back into cooking for 2!

I guess that's the problem. My dd also hates frozen food so that is another issue. He's a fussy eater. I stick to the staples but I always seem to throw out stuff which I hate doing.

Tamiri, what's your cornflake chicken? Is it just breaded with cornflakes, or something more? I'm looking for something different.

I essentially cook for two, here. We almost never have people and my kids barely eat my food. I still make more than enough for a family of four, because we live off the leftovers for the rest of the weekend.

This is the first time I am posting my menu because it's generally just us and we do it pretty simply but I am having my first company in my new home for dinner tomorrow night. So menu is:

-Deli in puff pastry triangles -DH hates fish so we generally eat salad for appetizer but I decided to give hima treat since it's nto just us. Wanted to make deli roll but they only had the little suares of dough so I improvised.
-Roast chicken with lemon, thyme and garlic
-Bok choy salad
-Moroccan Carrots (from this site, trying for the first time)
-Orzo with sauteed veggies
-Pureed butternut squash
-Perhaps a bought yerushalmi kugel from the freezer
-Peach crisp

Lunch will be whatever is left!

Which camp Massad? I went to Massad many years ago, and loved the food!

I doubt you were around in her time... in the 40s and maybe early 50s. She did that to pay for my father to go to camp. He was born 1931.... I know you are ancient... but not THAT ancient.

Nothing exciting. I made a shmear of mayo and mustard and then will dip the pieces in seasoned corn flakes crushed in my very own food processor. My kids have been begging for this for ages. I think the last time I made it was 3-4 years ago.

I know we don't live in the same place, but I've never seen turkey london broil anywhere besides my local kosher supermarket.

Breast is white. If you broil it, you will have dried ich. Are you sure it's the breast and not the thigh meat (which is wonderful)?
