To keep in the fridge and serve again and again...bonus if they last a full week...
Please post ideas for standard, only peeled vegetables, that most of us use.
I have:
Cucumber salad - cucumbers, purple onion, shredded carrots, sugar salt black pepper and fresh lemon
Beet salad - beets and onions, sliced, lemon salt sugar
carrot kohlrabi and homemade mayo
carrot pineapple coconut in OJ.
Any other ideas?

I can’t think of anything else other than those unless you want to consider potato salad.

Don't put dressing on the full salad so that they last longer. Keep dressing separate.

Shredded carrots seasoned with lemon, olive oil, slivered onion, and salt.
Marinated salad with sticks of zucchini, diagonal circles of carrot, red onion, lemon, oil, sugar, salt. Add peeled peppers if you can.

Every week I make deli containers full of chopped vegetables and it lasts about a week
The secret
1. Each container has only 1 type of veggie
2 paper towels on top and bottom and I change it every 2 days
So in my fridge you’ll always (not this week) find a container each of red, yellow, orange, green pepper, cucumber, reseeded tomato, red onion.
I chop using a chopper
I do this every week on Thursday and it truly lasts

I made a crunchy salad using different color peppers and pickles. It seems to last because it doesn’t have any “water vegetables”.
For dressing, I just use salt, pepper, oil and lemon juice.
