DD's birthday is on Pesach for the first time that she can remember. She really wants a strawberry shortcake for her b'day cake. I'd like to find a basic cake recipe that doesn't involve beating egg whites and will let me make flat-ish cakes that I can layer with whip cream and berries. Any ideas? Gebrokts is fine. I need something that won't crumble when I try to handle it. I was thinking maybe the cake part of the Pesach by Design crumb cake--just not with the crumbs. Is that a good consistency on its own?Any other suggestions? Thank you!

Most of the potato starch white/yellow/vanilla cakes that don't require whipping egg whites are gummy and awful (even the KBD one).
Better off buying 2 KLP yellow cake mixes, and layering them after baking. Those come out quite good.
