For chometz, there's a "recipe" where you mix Greek vanilla yogurt with flour until you get a dough-like consistency.
I imagine for pesach you can do the same but with almond flour, potato starch, Matza meal, or stove other flour substitute.

My mother makes a pizza dough with matza farfel, eggs, and shredded cheese in a foil baking sheet. She bakes that on it's own so it forms a crust and then she puts on tomato sauce, veggies, and more shredded cheese on top. Unfortunately I don't have access to the exact recipe at the moment, but maybe this will jog someone's memory.

My supermarket has from one of the kosher brands. . Plus the OU has said that Ottos cassava flour with an OU is approved for Pesach
