For all those suggesting roasted veggies , do you cook in advance and then warm up ? Because for me it’s only appetizing baked fresh

Seder nights if I don't have company and it's just our family I just serve chicken soup. Huge bowls, with lots of chicken and veggies and egg "lokshen". Couldn't be more simple and everyone loves it. We find it too late to eat such heavy foods anyhow.

We eat gebrokts so I make lots of dips that we eat with matza!!!
Otherwise the usual:
Meatballs, chicken on the bone, shnitzel, chicken stir fries, roast/brisket
Roasted potatoes,sweet potatoes and other veggies.
Potato kugel,brocoli kugel
I like to start the meal with salads:
Cole slaw, cucumbers, shredded carrots, lettuce, pepper salad, red cabbage....
Soups are chicken soup, mushrooms, zuchinis, brocoli, vegetables, minestrone (minus pasta or beans)

I find that in general anything made in little portion cups or ramekins is more desirable, like mini kugels vs a slice of kugel. So I spend an extra few minutes putting the kugel batter into little foil pans instead of into one big pan. It's also easy to serve or take as a snack.

Like the poster above, I also make ices in mini portion cups. I make lemon italian ices with strong lemonade, grape juice ices (watered down grape juice with sugar added), and frozen applesauce. Having lots of those on hand for whenever anyone needs a snack or treat is great.
Every morning I cut up a few melons or other fruit and leave the chunks in the fridge for people to take.
I make a lot of simple food. We don't use too many ingredients on Pesach so that's what works...
A big pot of chicken soup with tons of vegetables, and sometimes chicken balls (ground dark meat, just make little balls with wet hands and toss into boiling soup) is helpful to have on hand.
I prefer easy salads like cucumber salad, avocado salad.
Fish patties (just make small balls of defrosted fish roll with wet hands and flatten onto parchment paper) are delicious and very popular. |
The chicken balls taste good with nothing in them ? How do they stay together ?

I am making Pesach this year for the first time and keeping things very simple.
The foods I am making is as follows:
Chrein
eggplant dip
fish (Tilapia, sea bass, Salmon)
chicken soup
cream of chicken soup
chicken on the bone
meat
kugel
roast potatoes
beet salad
cucumber salad
carrot salad
blended fruit sorbet (1/2 ingredients)
apple compote
cholent
liver
Chol H is meatballs, avocado salad, egg salad, omellets, mashed potatoes,chicken schwarma, sweet potato sticks,onion soup, butternut squash soup
Maybe a choc cake and mousse.
Am I missing something?

This such a good way for me to get my menu organized!
Erev Pesach: French fries, scrambled eggs, beef jerky
sponge cake, chocolate cake, Blondies, crumb cake for noshing and for breakfast
For both seder nights:
Chicken soup with matzo balls (we eat gebruks) and egg noodles
Chulant - meat, potatoes, kishka, net bags of butternut squash, carrots and onions. Yum!
Chocolate mousse
Jello sorbet
Lunch # 1
Flounder or salmon, not sure which yet
Zucchini lasagna
Matzo pizza
Avocado salad
Ice cream for dessert
Lunch #2
Leftover chicken soup
Making a BBQ- hot dogs, chicken cutlets, chicken wings, grilled peppers and onions
mashed potatoes
Cake for dessert
I'm so excited for Pesach ☺️!

No recipe
If you like sweet salads: oil, vinegar, sugar and a bit of pepper
If you dont: oil, vinegar,salt ,pepper and a garlic cube.
If you use frozen dill cubes, put some in cucumber salad it's delicious!
If you like mayonnaise (some of my family don't touch it!) For Cole slaw 1c mayonnaise ,1/2c lemon juice and 1/2c sugar

They do taste good. They were not amazing prize winning but my kids (and me) enjoyed them. They absorb salt from the soup so they are not bland.
My guess is that the higher fat content of the dark meat is what keeps them together with nothing added.

Easiest dessert, baked apples.
Don't even have to peel apples.
Optional: core apples and stuff with Chopped walnuts and brown sugar for a yummy topping.

Hack
SAute tons of onions and freeze in small bags.
Great to add to potatoes, soups, quinoa, roast veggies, etc.
I heard some saite onions in the oven or crockpot overnight.
