FWIW the strong taste of lamb might be because of the quality of the meat and its age.
When lamb is butchered when it is a bit older, it is called mutton and has a much stronger gamier taste than young lamb.
People might be buying mutton sold as lamb. 🤷♀️🤷♀️

I haven’t found that to be true of any meats I’ve bought, but that would be pretty deceptive if it’s true.
Lamb is a sheep under a year, mutton is sheep over a year. Selling it under a false name is totally unacceptable IMO especially since lamb is much more expensive

I personally don’t like the flavor, it’s pretty heavy/strong. I prefer beef any day. My husband likes it a lot though. As I’m sure you are seeing, it’s a very specific taste.

are there any parts of lamb that are less fatty?
I would like to get the lamb under a year but my butcher will never know what I am asking...

It’s super fatty and soft which is why some people love it but some people can’t stomach it for the same reason.
