Thai beef
Serves 3-4
1 lb ground beef
2 T minced ginger
3 cloves garlic, minced
1 t red pepper flakes, plus to taste
1 small bunch cilantro chopped (1/4 C fresh)
1/4 C Smooth peanut butter
2-3 T Lime/lemon juice
2 T soy sauce
1T olive oil
Brown beef in skillet. Drain. Add ginger, garlic, and pepper flakes. Stir 3-4 minutes.
Meanwhile, whisk cilantro, peanut butter, juice, soy sauce, and oil. Stir into beef and remove from heat.
Serve hot, sprinkled with more pepper flakes and crushed peanuts if you have them. I've done in pita lined with romaine or on a bed of rice. Can also make to top a salad with peppers and other veggies. (I added peppers with the ginger and garlic, but my boys don't like them.)
Serves 3 if dh is a big eater.
Serve with:
Thai Cucumber salad
Mix 2T lime juice, 2 T sugar, 1/4 t red pepper flakes and 1/4 t salt. Slice 1-2 cucumbers (Remove seeds.) Mix with 1-3 T fresh herbs like cilantro and basil. Add dressing just before serving and top with chopped peanuts.

Trade the peanut butter for 3 tablespoons sesame oil. Interesting and a bit healthier.
