I've never seen it. When I was trying out GF I used rice paper wrappers but I found then very hard to work with.

I'm hosting sheva brachos with a few GF guests.
I was thinking of cutting out the couple's initial letter, baking it, and top the soup with it.
Do you think I can do that with rice paper?

No - rice paper is not intended to be baked and hardened like something made with wheat flour.
If you want to have an initial, you could make a gluten free cracker with their initials but it would be a poshke.

You can get gf wraps from the brand "pas nisht", cut out the initial and fry/toast or just leave as is
