Dh went shopping and bought this really yucky bottled roasted red peppers. I thought I could revive them by making them into a dip. I drained them and put them in mini chopper with fresh garlic, a little olive oil, salt and black pepper and pureed it. Its pretty good. In the future I would roast my own peppers and skin them, then do the rest of the above.

For eggplant something, someone told me today: fry the eggplant rounds, unpeeled. Layer in a pan. Top with garlic and celery!. Repeat layers. Pour a vinegar marinade over all (some vinegar, hot water, sugar, salt). The longer it sits, the better it gets. I have no recipe, this is what I was told to do.
Otherwise, I was also told: fry the eggplant rounds, unpeeled. Add tomato sauce of your choice (I will pour the sauce I made for tonights pizza over the eggplant). Allow flavors to meld in fridge. Serve with lotsa challa.

It's breakfast for dinner time again and I'm still figuring it out, but this is what I'm thinking:

Virgin Mary's
Smoked salmon, dill and leek frittata
Lemon Souffle pancakes with
Blueberry sauce
Roasted sweet potatoes with oranges or roasted asparagus (haven't decided)
Coffee souffles with mocha sauce

I'm asking a serious question here, no bashing please.

Where do you wonderful ladies have the time to do all this cooking? I barely keep my head above water with soup, chicken and salad...maybe because I work full time but still...I'm in awe of these recipies and menus...I barely have time to shop for the basics...

I can't believe you're asking that freidasima! I was in awe of your Shabbos menu!!

I think others make a lot more than me but I'll answer for myself. I have two so far under four years old. I'm now a SAHM, B"H. I try to do shopping bit by bit through the week with them as an outing. I cook at least half of it Thurs. night if possible, and the rest Fri. sometimes though I get stuck, and I just start 10am Fri. morning cooking, bouncing between kids and kitchen. also my oldest is in school most of the day, which helps.

also I try to have a few things in the freezer...
