I make similar. Onion garlic squash and then add potatoes or cauliflower (if I want less carbs) as the base.
Then I add broccoli or celery whatever "cream soup" I want to make. I blend. Then add a few small pcs of whatever veggy cream in making and it's a "broccoli cream soup" "squash cream soup" "celery cream soup"....
Or I just do onion garlic squash and I add chicken bones in a net bag w pcs chicken breast. Then shred the chicken breast.
For an easy 1 pot dinner I'll do the chicken cream soup and do lots of chicken breasts with spaghetti or other pasta in the soup and give kid some frozen fruit in unsweetened apple sauce dessert to counteract the heaviness....
Kids love it. I usually make a huge pot and freeze the rest. And take out from freezer, boil fresh breast in the soup for 10 minutes. Add minutes pasta boil for approx Another 10 minutes, take out chicken breast, shred it, put it back in. Serve. It's me go to dinner if I'm running late or be exhausted. My kids LOVE it so I save it for days I want them to all eat with no fuss.

My kids too!
It’s hard because they each like different things.
Tonight I’m serving penne with tuna latkes and green beans
I know my son won’t eat that so I’ll fry him a piece of schnitzel and put it in a roll.
One supper that’s been working for my kids is mini pizzas (mini pizza dough with sauce and shredded cheese) served with baked fries.
