Yummiest stir-fry dinner

this is a recipe I took out of a pamphlet we received in the mail. sometimes I guess you just hit gold. after just tweaking this recipe slightly, I came up with the meal both me and my husband love (which is a little hard since I'm on a diet)

[u]Chicken and Broccoli Stir-fry
Serves 2-3 (depending on the portion size)

Ingredients

*2 tbsp. oil
*4 cups broccoli florets
*1 medium-large onion
*1 lb. chicken
*3 tbsp. cornstarch
*2 cups + 2 tbsp. water
*1/2 tsp. garlic powder
*1 1/2 tbsp. brown sugar (splenda)
*1/3 cup soy sauce
*2 cups rice (cooked)

Instructions


*in a wok, stir-fry in 1 tbsp. oil an onion cut into wedges until brown, then add defrosted broccoli for additional 5 min. remove veggies from wok.
*in separate bowl, make a mixture with 2 tbsp. water, 2 tbsp. cornstarch and garlic powder. *cut chicken into small chunks and sit into mixture. *heat 1 tbsp. oil in wok, add the chicken (making sure to remove excess mixture) until brown (about 15 min.).
*Re-add vegetables to mixture, stir together.
*In a bowl, mix 1 tbsp. cornstarch, 2 cups water, brown sugar (splenda) and soy sauce.
*add to wok, on top of chicken and veggie mixture.
*cook another 10 min. or so , until thickens.
*serve over rice

Special Notes


If the mixture is taking too long to thicken at the end (the sauce should basically disappear into the chicken and veggies) add a little more cornstarch dissolved into water.

*also, please note that you can substitute a thin steak (like pepper steak) for the chicken. just cut into tiny chunks

I just made it (with beef) - it looks and smells yummy! I am going to make rice now, and we'll have it tonight for Shabbos.
I'll let you know how it is tomorrow night!

Thanks for posting this recipe. DH and I really enjoyed it. I did make a couple of changes to it though, for anyone who's interested.

First of all, I switched the rice for lo mein noodles, so it became a lo mein dish, YUM!

I also thought it needed some extra seasoning so I added salt, and perhaps a little more soy sauce (I'm not sure about the soy sauce, but definitely a nice amount of salt).

I'd be curious to try it with pepper steak. But I think I'll have to wait it out a bit, after having it three nights in a row Smile
