Chicken stir fry and rice noodles. Stir fry has chicken and veggies in it but if anyone has an idea for another thing to make let me know

This time I am starting with leftover chicken. I shred it off the bone with two forks, heat some bbq sauce in a pot, add the chicken and heat until warm.
If you want to make chicken from scratch, You can cook bone in or boneless chicken whatever you like until soft and then shred and add sauce.
Such an easy dinner and very versatile. Can be served so many different ways.

I just made this recipe and it came delicious. I used cutlets since that's what I had and put it in the crockpot for 2.5 hours on high. Took it out, pulled with 2 forks, mixed it all back with the sauce and put it on low for another half hour until ready to serve

I liked it and my kids didnt notice the spinach. I find it gets hidden by the sauce and the sauce flavor takes over the spinach flavor.

Sure. It was somewhat based off the recipe in Peas Love n Carrots but not exactly. I wanted to use up my leftover chicken soup and also kind of threw in what I had in the house. It was really good.
I sauteed 2 onions, then added crushed garlic, a deseeded and sliced jalapeno, chopped bell pepper, and a sliced carrot and sauteed some more. Then added 1/2 bag frozen corn, a couple of chopped tomatoes, few tbsp tomato paste, salt and cumin and gave it a few more minutes. Added chicken stock, shredded leftover chicken, drained and rinsed can of black beans, few cubes of cilantro and juice of a lime. I brought to a boil and cooked for about 45 minutes.
I served with homemade tortilla crisps (baked).

Carrot rice soup is actually French rice soup from the BY cookbook, not sure if I can post it here

I have a simcha tonight. (Had a different one yesterday and another one monday. All close family members. Some local some not.... im beyond zonked. I
So dh and I will eat at the simcha. Bh for simchas!)
Between all 4 kids
I made Waffles w protein stuck in there....
So everyone has to eat at least one waffle
Nuts
Chocolate chip cookies we made for kids school snacks
Cake same as cookies
Cereal and milk
Apple sauce....
They can fill up on any or all of these.
One of those nights.....
