Looking for muffin recipes with a good balance between nutrition and taste. Like let's add some fiber and cut down on sugar but not to the point that the texture is weird or it doesn't even taste sweet.
I don't care what kind of sugar (like sugar vs honey or maple syrup), prefer not to use artificial sweeteners.
I like to add in fruits/veg like zucchini, pumpkin, apple, blueberries, carrots etc (not all in the same recipe lol).
I like to add in whole wheat flour for extra fiber where I can, doesn't have to be 100% whole wheat flour.
The last few healthy-ish recipes I tried kind of bombed flavor/texture wise, so looking for tried and true ones that still taste good.

Thank you! I think I've had good luck with ambitious kitchen recipes before.
The last couple I tried that weren't great were yummytoddlerfood recipes :/

Banana Nut Butter Muffins
2 Eggs separated
2 very ripe mashed bananas
1 teaspoon baking soda
1 teaspoon vanilla extract
1 cup natural nut butter
Preheat oven to 350.
Beat egg whites with a mixer until it’s stiff.
Add yolks and bananas and mix on medium speed for 3-5 minutes until batter is fluffy and has expanded. Add remaining ingredients and mix again until well incorporated.
Add chocolate chips and gently mix with a spatula.
Divide batter into lightly greased muffin pans. (I usually get around 10-12 muffins per recipe.)
(Can also be made in a 9x13 and cut into squares)
Bake for 22 minutes.
Bananas Muffins
3 bananas mashed
1/2 lemon squeezed
1/2 tsp salt
1/2 tsp baking powder
1/2 tsp baking soda
1/2 cup oil
1/2 cup maple syrup
2 cups flour (use 1 c w/w 1 c white spelt)
1/2 cup choc chips or add ins of your choice.
I mix by hand in a bowl, add to muffin pans and bake for 15-20 min on 350

Grain and Seed Muffins
Excerpt From: Dorie Greenspan - Baking with Dorie.
Makes 12 muffins
GOLDEN BROWN AND POINTY-TOPPED, these muffins are hearty, sturdy and pleasantly rough, the kind you’d pack for a hike or a picnic. The batter is made with whole wheat flour, oats and wheat bran—small flakes with big flavor—and sweetened with brown sugar and maple syrup. Using oil rather than butter provides a little spring in the crumb. Good plain, they’re extra-good with butter or jam, cream cheese, a slice of cheddar or alongside an apple. I’m also partial to them with apple butter.
1 cup (136 grams) whole wheat flour
½ cup (68 grams) all-purpose flour
2 teaspoons baking powder
½ teaspoon fine sea salt
½ teaspoon ground cinnamon
¼ teaspoon baking soda
½ cup (50 grams) oats (not instant)
½ cup (30 grams) wheat bran
½ cup (100 grams) packed brown sugar
2 large eggs, at room temperature
1 large yolk, at room temperature
1 cup (240 ml) milk, not very cold - use soy milk for pareve
⅔ cup (160 ml) flavorless oil, such as canola
⅓ cup (80 ml) maple syrup
⅓ cup (40 grams) sunflower seeds, preferably raw
2 tablespoons flaxseeds
2 tablespoons sesame seeds
½ cup (80 grams) moist, plump dried cranberries or raisins
Center a rack in the oven and preheat it to 400 degrees F. Line a regular-size muffin tin with cupcake papers or coat the cups with baker’s spray.
Whisk together both flours, the baking powder, salt, cinnamon, baking soda, oats and bran in a large bowl. Stir in the brown sugar, making sure there aren’t any lumps.
In a large measuring cup or a medium bowl, whisk together the eggs, yolk, milk, oil and maple syrup.
Pour the liquid ingredients over the dry and, using a flexible spatula, stir until most of the flour is moistened, making sure to get to the bottom of the bowl; you might have a few patches of dry flour, and that’s okay. Add all the seeds and the dried cranberries and stir to incorporate. Divide the batter evenly among the muffin cups—it will fill them.
Bake for 15 to 18 minutes, or until the muffins are peaked (their tops may crack, and that’s nice) and deeply golden; a tester inserted into the center of a muffin should come out clean. Transfer the tin to a rack and wait for 5 minutes, then pop the muffins out onto the rack.
Serve the muffins warm, or wait until they reach room temperature.
STORING: Muffins are best eaten soon after they’re baked and certainly on the day that they’re made. However, you can keep them covered at room temperature overnight—then, if you think they need it, split and toast them. Or freeze the muffins in an airtight container for up to 2 months.”

This is my favorite healthy muffin recipe - I make it in cake form for my kids' birthdays because it tastes like it has sugar, but it is completely sugar free!
1 3/4 cups (250 grams or 8.8 ounces) all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2/3 cup honey
2 large eggs
3/4 cup yogurt
6 tablespoons (85 grams) butter, melted
zest and juice of one lemon (mine yielded about 1 tablespoon zest and 1/4 cup juice)
1/2 teaspoon vanilla extract (optional)
Chopped fruit (I usually use strawberries)
Preheat oven to 220C/425F degrees. Butter 12 muffin cups or line them with liner papers.
In a large bowl sift together flour, baking powder, baking soda and salt and mix in the sugar and lemon zest.
In a medium bowl, whisk the eggs with the yogurt, melted butter, lemon juice and vanilla extract just until combined. Pour the wet ingredients into the dry ingredients and stir with a wooden spoon or a rubber spatula just until combined. Do not over mix. The batter should be thick and lumpy. Divide the batter evenly between the muffin cups (almost all the way to the top). Bake for 3 minutes and then reduce the oven temperature to 180C/350F and continue to bake for an additional 12-17 minutes until a toothpick inserted into the center of the muffin comes out clean. Cool for 10 minutes and then move to a wire rack to cool completely.

If you want something easy the simple mills baking mixes are easy and delicious. I buy the banana muffin mix and the fudge brownie cake mix. It's made with almond flour and coconut sugar so it's less carbs. It still tastes good and I like to add a packet of monk fruit sweetener to make it a drop sweeter.
I feel like I'm still getting cake and I'm not feeling guilty after I eat it cuz it's "healthier"
I just make sure to check it has ou cuz not all mixes have.
Ps also to the banana muffin mix I sometimes add mini choco chips. Yum!

INGREDIENTS

1 cup plain Greek yogurt*
2 teaspoons vanilla extract
1 cup (6 ounces) blueberries, fresh or frozen
1 tablespoon turbinado sugar (also called raw sugar), for sprinkling on top

Lately I have been making a lot of full whole-wheat muffins, with honey and/or Stevia
There are many healthy recipes on .kosher.com. One carrot muffins recipe I swap for ww flour, use honey ontead of the sugar, and use half oil and half applesauce instead of the full amount of oil.
Here's one recipe I found and really enjoyed. Apple muffins. They came out really moist and fluffy. https://sallysbakingaddiction......ins/.
