GR wrote: | Also, Tamiri, what's your purple cabbage in mustard vinaigrette salad from last week? |
No recipe. Shred the cabbage and make a vinagraitte with olive oil, lemon juice, bit of vinegar, mustard (dijon) and then whatever strikes your fancy. It needs cumin. That is what gave me the thought of regular cabbage and cilantro for this week. Cumin is a winner. It was very good and stayed fresh and crispy till Wednesday.
If you google such a recipe you will probably find something because I base my stuff on things I have eaten.

this week I bought a cabbage and cilantro. I do recall a recipe with those two ingredients, but I think I last made it in the States (5 years ago at least) and it had lime which I don't get. So I shredded the cabbage, chopped the cilantro, added olive oil, lemon juice and salt and there is salad.
I make lime cilantro coleslaw OFTEN (including just an hour ago)! We love it. I add about 1/4 cup lime juice to 1 lb of shredded cabbage. A bunch of cilantro. 2 tablespoons oil. Kosher salt to taste. YUM. It's really delicious on tacos too. I could eat it every day.

I don't get limes here in Israel but it's delicious with lemons as well.

greeneyes- chicken baked with green beans is exactly that. No special recipe, I just had to use up our green beans.
Zucchini Kugel: (it's my favorite kugel, and so good)
4 large zucchinis (I don't know how many lbs., just the ones that are as big as clubs )
Wash zucchinis and cook them in a big pot of water. You'll probably have to cut them to fit. Don't put too much water, just to cover, because zucchini absorbs so much and you'll have to be squeezing it all out later.
If you want a really soft kugel, almost like baby food, cook zucchinis until very soft. If you like your kugel a bit chunky with pieces in it (like I do) cook zucchinis until soft but the ends will still be a bit hard.
Cool zucchinis and squeeze out excess water, as much as you can. You don't want a watery kugel.
Add 3 eggs
1/2-3/4 cup of flour (depending on consistency)
1/2 cup of oil
and some spices- salt, pepper, onion powder and some sugar if you like it sweet (I don't).
Pour into 9x13 pan and cook until top is completely browned.
Eat while hot, warm, or cold. It's really good all different ways.

Thanks for the instructions, Tamiri.
This is so weird, I never thought I liked the name Micha before but something just struck me about it yesterday when I read your post.

That must be why I can't imagine what it tastes like, LOL. I'll do a google search.

WOW! GR, That is so weird that you just posted that recipe, because I had asked my SIL for that recipe yesterday, and she still hasn't given it to me! So....now I have it just in time to make before shabbos!
Thanks!

For zucchini kugel?
It's not really a recipe I got from anywhere just what I found to work out nicely after a lot of trial and error, and following other disappointing recipes.
It's really easy, too. It sounds harder than it is.
Enjoy.

I once had a friend with an amazingly cute brother, named Micha. I never knew another one besides for one in Pgh. The name stuck with me, but we did not use it for four boys. With #5, we had a surprise brit: it was on time, as opposed to all the others where we waited a minimum of 2 weeks due to jaundice. We had to come up with a name and the book of Micha is short and easy to get a dvar torah out of (from Tuesday pm to brit in Wed afternoon) - my husband was happy to have that book and give the name to Micha. It's a really cute name and Yinon I always loved but never used until this little surprise baby who is a strapping little boy by now.
Anyway, my mother is very into experimenting with food and I got some of that from her. I no longer experiment since it seems a shame to throw everything out afterwards, as my kids only like "plain" food and there is just so much my skinny Dh will eat. I learned a lot about spices while I was a soldier-teacher working with women of Mizrahi descent and use what I learned, to this day. I recently came across the term "pilpel chuma" which is really paprika with garlic (shum) in an oil base. The Tripoli Jews use it to spice their Chreimeh fish (divine, to die for fish in sauce) and it can be used in a lot of other dishes as well. I bought a commercial jar this week and it's really good, so I plan to make it myself when the jar is finished. I have tons of spices but don't use to many of them regularly because of my picky kids.

I just realized that I skipped a step in the zucchini kugel.
Don't forget to mash the zucchini! All the way if you want it very smooth, or you can leave bigger chunks if you like it that way.

OldYoung, sorry I should have written 'bought' next to it. it's compliments of the local kosher butcher shop. I *wish* I could take credit for it...since it usually gets devoured...

LOL Tehilla. I see you've read what's on the menu for my guests. The reason why I wrote "bought" next to whatever I bought, is because I already bought it. Make sense? It's one more thing off my to-do list, which is my #1 reason for posting here, so that it's clear in my head what I've accomplished and what is still waiting for me.
So did you already buy the dip, or does your "bought" mean it's from the store?

GR
we're also having guests this week. I've been holding off on guests cause I haven't felt up to it.
yes, everything is purchased and more than half the stuff is done. I just have to do my vegetable side dishes tomorrow, all at once--they can cook in the oven together. I also have to do my desserts, but they're fast. the meat, chicken, fish, tea, and other things are all ready.
