You make it sound so easy, Tehilla. G-d knows I've been working my head off all week and I still can't seem to get it all together. You sound like you just snap your fingers and it's done.
If you don't mind my asking, how could you have prepared tea already? Do you mean tea you're serving cold (iced tea) or that you've already prepared the tea to be made on Shabbos? (Do you do that? Some do and some don't.)

so uninspired this week, and veggies and fruit are outrageously expensive now...
so...
homemade bagels instead of challah
cream of potato zuchini and broccoli soup
salmon with sweet, sour, and spicy sauce
corn and hearts of palm salad
chicken and spaghetti, hotmama style.
watermelon mint ices.

GR, I didn't know I made it sound easy...I find it a 'labor of love' to get ready for Shabbos every week! it's not easy with little ones (B"H).
iced tea: I posted the recipe a couple of weeks ago. I make a big pitcher of tea and just chill it. then it's a drink (caffeinated although you can make un-) just like soda or seltzer.

thanks greeneyes!
it's actually really easy. I'd normally use tilapia, but happened to have flounder on hand.
I spread pesto sauce (Sabra) over it, with fresh lemon juice (leaving in lemon slices is good too), olive oil and maybe a dash of salt. fresh garlic is good too although the pesto sauce has garlic. then I put just a little water in the pan so the fish doesn't dry out while baking...and bake at 350 until done. I like the edges on mine and a little of the top to be crispy-ish so I cook a little longer.

Thanks, Tehilla! Do you bake the fish covered or uncovered?

That was quick! Thanks. My husband is a big fan of pesto, so that caught my attention. I hope to try making it one of these days.
Oh, and one more question, do you use fresh tilapia or is frozen ok too?

thats cute tehilla, I just made almost the same thing for dinner last night... flounder with fresh lemon and lime juice, basil, garlic, mayo, olive oil, and crushed pistachio... mix together, form a paste, and layer over fish, and bake uncovered.

Cookielady, how about that roasted pepper dip. I make tomato dip and eggplant babaganush, but that sounds like an interesting idea. Can you please post the recipe?
