Interesting. One of my son's divrei Torah this Shabbos was about the giraffe.
He had a whole source that there actually were only 2.
Based on the pesukim saying Beheima not Chaya, he brought a shita that the domestic animals had 7 (either 7 or 7 pairs) because they were needed for karbanos after.
But kosher wild animals (giraffe, all the deer, bison, buffalo, etc) according to this shita only had 2. Because they're not Beheimos or something.

That's very interesting!
I'd love to see the source for this.
Also, Rashi gives the reason for saving more kosher animals because they had to bring karbanos.
Did giraffes and bison qualify for karbanos?

I mean wild animals are never korbanos, only domesticated animals

So then, at least based on this Rashi, it would make sense that there were only 2 of each if these kosher animals. I think.

Each of these are compared to the Torah?
Ain mayim ela Torah
Milk, on Shavuos we talk about how Torah is compared to milk, and it sustains us, like a baby is sustained with milk..
Wine is also compared to Torah, because it gladden the heart "yayin yesamach levav enosh..." something like that.

Am I on the right track?

Yes, 7 kosher animals.
Noach waited 7 days before sending out the yonah.
Your last answer is kind of "forced" there were 8 people.

7 colors of the rainbow- interesting, but not spelled out exactly in the Torah.

The last two answers are:
Noach waited 7 days to go into the Teiva because his grandfather Mesushelach died.
And, they landed on Har Ararat on the seventh month.

2. This is based on Medresh but Yosef married the adopted daughter of Potifar, who some say was really the child of Dina and Shechem? (Asenas bas Potifera)
