Water never boiled for me either since it was on low... came out tasting great and it's been a week and no food poisoning bh so I guess we're okay

I leave it in bag. Put it in 9x13 pan, add water till 1 inch below top of pan, cover very tightly with foil. bake 200 for 1.5 hrs per pound. This bH works great with any roast even with imported meats or meats of lower quality.

This is imitating sous vide. It’s cooking vacuum packed on a low temperature for a long time. Yes, it’s safe.
