I’ve always removed the bag first. I was sure you’re not allowed to cook a bag. Then I heard that if I removed the bag I lose all the flavor while cooking in water. So you are supposed to cook it with the bag.
What’s the right way to cook it?
Doesn’t the bag melt? Is it healthy to cook with it?

I always take it out and rinse it well. I find it way too salty otherwise.

I rinse lightly and bake without bag.

If your pickled roasts/corned beef are tasty and salty to your liking without the bag, then there's no need to change your method.

The instructions on the packaging from the store says to leave it in the vacuum bag and cook it in water on the stove top.
If you bake it , I’d remove the packaging , rinse well first .
I did notice that the stores who have directions and say to leave it in the bag have much much less salt content than the other ones I have purchased elsewhere .

I would actually prefer if it has more flavor. I feel the water dilutes the pickling flavor a lot. I just want to make sure regarding melting and safety if it’s okay to bake in the bag since I never heard of it.

Mine has no instructions. Would be nice if all meats have instructions!

There are people that do cook it in the bag. You can definitely try it and see if you like it.

I take the meat out the bag, squeeze out all the juices into the pan to keep the flavour and simmer on low heat for a few hours with carrots onions, peppercorns, garlic snd bayleaves covered with water nearly to the top of the meat. Always comes out very tasty

For the easiest possible cooking, leave it in the bag, put it in the crockpot covered with water and cook on low for 24 hours. You don't even have to defrost it first! Great for second night of yom tov.

You can add more pickling (and other) spice to the water...

For a 4 lb pastrami roast, place in a deep 9x13 pan, add water just 1/3 of an inch up. Cover tightly. Bake at 300 for 4 hours.

I've never had one come without a bag though. When you open the roast, you may find a bag underneath after all, once you get through the saran wrap.

I did that on Rosh Hashanah and the water never boiled I even used hot water from the urn. Is that normal? Is it safe?
