I have tried few different recipes of jalapeno dip, all come out really watery. I am looking for more of a creamy dip. Anyone can help me? What am I doing wrong? I basically do 1 jalapeno pepper to 1 cup mayonnaise plus spices.

You may be pureeing or chopping your peppers too fine. Try either cutting them more coarsely or draining them in a sieve and/or on towels before adding to the mayo.

When blending them together, only add a little bit of mayo to start. Just enough to get the jalapeno blended. Then mix the rest of the mayo in by hand.
Sounds like the mayo is separating from overmixing.

BTW are you using lite mayo? Try full fat.

Use regular mayonnaise, not lite.

Thanks all! Yes I have been using light mayo. I will try regular and adding a little bit only then by hand. Appreciate the help!
