WHAT YOU NEED:
Chicken (as with all my chicken recipes you can use whatever type and how many you want, but cooking time will vary)
Onion finely chopped
Garlic (you can use fresh that you chop or store bought minced, both are fine)
Zaatar powder
Veg oil
Olive oil
Potatoes (optional)
Lemon, cut into small wedges
Salt/Pepper
1. Preheat to 350. Spray roasting pan with Pam or equivalent. Place chicken in pan, season with salt/pepper.
2. While oven is preheating you can put in the chicken UNCOVERED to slightly brown while doing step 3
3. Heat olive oil, saute onions till almost clear. Then add garlic, saute for another minute. Then add zaatar till mix becomes dark green.
3. Remove from heat. Take out your chicken from the oven. If using potatoes you can add your potatoes (cut into pieces) now and pour zaatar mix over chicken (and potatoes). If you want, you can sprinkle more zaatar over chicken (and potatoes if using) to coat well. Pour SOME (not too much) veg oil over everything so that there is a VERY THIN layer on the pan.
4. Squeeze ONE of the lemon wedges over chicken. Tuck in the remaining wedges between chicken pieces (and potatoes if using)
5. Cover and return to oven. Cook for about 1 hr till tender and juicy, but do not let dry out!
Sorry for not posting measurements. Depends on your taste and how many ppl you are serving!

Theres a Zaatar Chicken recipe in the Kosher by Design - Short on Time book.
It is really delicious and soooo easy 2 make.
You put prunes and olives into a crock-pot (olives r optional)
shmear the seasoning onto the chicken pieces an drop them in to the crockpot
then close the lid n forget about it for 6hrs.
If u dont have the book an u want the recipe let me know an I will try n copy it exactly.
Also the Greek Olive Chicken with lemons from that book came out really good.
