We are moving in a few weeks and my dh wants me to make supper and Shabbos food in advance for the next month or so. I'm blank on some days, my brain is fried, plus I'm starting a new job....need really easy, and simple both milchig and fleishigs.

Eggplant parmesan, you can buy the eggplant frozen already breaded. Only takes a few minutes to layer with sauce and cheese.

I usually make chicken patties/hamburgers in bulk and then freeze them raw, they're very easy to grill or bake when you need them. Same with meatball mixture.

Shabbos food is easy:
Freeze challah, chicken soup, matzah balls, potato kugel, other kugels, deli roll.
You can freeze raw breaded chicken, then defrost and bake/fry fresh.
Suppers:
Pasta - I'm a weirdo, but I make a giant 2-lb bag of pasta, then portion it into smaller bags when cooked. I always serve with a sauce on top, so it's fine when defrosted. Some people don't like the texture, but I'm fine with it. I also do this with rice.
Baked ziti/Lasagna freeze well.
Make supper with frozen foods, like fish sticks, falafel balls, chicken nuggets (you can make a popper sauce).
Freeze chicken cutlets in marinades, then defrost and bake/grill fresh. The flavor absorbs really nicely this way.
Meatballs freeze very nicely.

Start with the protein.
Meat loaf
Meatballs
Shnitzel
Chinese chicken
Sweet and sour chicken
Chicken, cooked and cut up (can toss into a salad or have in wraps/taco's)
Shepherds pie (that has both carb and protein, boil up frozen peas, it's yum together)
Burgers
Meat lasagne
Tuna cutlets
Cheese Lasagne
Hatzolocho! It should be with mazel!

Why do you need suppers for a whole month? Do you have to put in a new kitchen after you move? I moved several times, including feom country to country, if you pack your kitchen carefully and unpack it the first week you should be able to start cooking witin a few days. It is certainly a huge help to have a week worth of supper ready especially that first shabbos but I think a month worth is overkill.
