Anyone have a carrot salad recipe to share?

This one is my favorite:
2Tbsp lemon juice
1 tsp honey
2 Tbsp olive oil
1 tsp salt
6 carrots julienned or coarsely grated
2 stalks celery, diced
1 red pepper, diced
Mix first 4 ingredients. Add vegetables. Serve chilled.

No exact measurements. Shredded carrots, crushed pineapple, freshly squeezed lemon juice and freshly squeezed orange juice (don't bother making if not using freshly squeezed), sugar.

No exact measurements, but this one is AMAZING:
Grated carrots
Olive oil
Red wine vingar
Salt
Chopped salted peanuts
Chopped cilantro
It's addictive, like I could shovel it into my mouth.

My mother in law makes an amazing Morrocan carrot salad. Slice carrots into thicker chunks, boil till fork tender.
Season with olive oil, lemon juice, cumin, coriander, fresh minced garlic, garlic powder, hot paprika, fresh chopped cilantro.
