I just made this up and it was soo good (I just ate a cup of it)!
I'm now out of zucchinis!!!!! Yay!

2 Zuchinnis, diced
2 Sweet potatoes, chopped
2 onions, diced
1 cup water
1 tablespoon chicken consomme
2 tablespoons sherry (if you have it)
salt
1/3 cup milk

Sautee onion until transparent. Add the zucchini and sweet potato. Let sautee for about 20 minutes, then add water, sherry, and milk. Cover pot and let simmer. Once everything is soft, puree with immersion blender. Taste and adjust seasonings.
