I'm not sure if this is what you had in mind, but try it and let me know how it turns out. I don't have any measurements more specific than this.
eggs
¼ tsp salt
¼ tsp white pepper
2 (more) tabl corn starch
dip cutlet strips in mixture then dip in corn starch or flour and fry
Sauce
¼ cup sugar
¼ cup soy sauce
1 ½ tspn minced garlic
2 tabl minced ginger
2 tabl hoisin sauce
(3 tspn sugar)
3 tspn white vinegar
2 tspn wine
2 tabl corn starch
pour sauce over chicken strips and bake 10 min
optional - add scallions and sauteed pepper before baking

I tried it, I wouldn't put in as much soy sauce the next time, but otherwise it was fine

whats hoisin sauce? what type of flavor does it give and what brand is it?
also, how many eggs? and can I use black pepper instead of white?

fyi, I've had a hard time finding kosher hoisin sauce. The only one I've seen is Iron Chef (chaf-k parve), but I haven't tried it.
