Garlic Confit, storing question.

We make Garlic confit for shabbos. We tend to eat just the garlic without the oil.
I just have read that it can be dangerous if not stored safely.
I always refrigerate it without the oil.

But what's the correct way to refrigerate it and how long for?
And also can I freeze them without the oil?

I think it’s ok because it’s cooked garlic
