I like a very strong asparagus flavor, but you can use less if you'd like.
4 c. asparagus (cleaned, checked and cut into pcs) (plus 1-3 pcs left whole for the end)
1-2 ribs celery finely diced
1 large onion diced
1 med. carrot diced
2 cloves garlic
1 Tblsp flour
water/soup stock/soy milk/rice dream
s+p
heat small amount of oil in med. size pot
add onions and garlic and saute until onions are translucent
add celery, carrot and asparagus
saute another 3-5 minutes
Sprinkle with flour and stir well
slowly add 1/2c. liquid and mix well (so flour doesn't clump)
continue slowly adding liquid until all the veggies are covered.
Reduce heat and simmer until carrot are soft
season with s+p
using a submersion blender, puree the soup
adjust seasoning to your taste (salt, pepper, a dash of cayenne if you like kick)
To serve: pour soup into bowl, using pareve creamer drizzle in a swirl over soup, top with croutons (hoemmade are best) and chopped fried asparagus: with remaining 2-3 pcs of cleaned asparagus, chop and fry in oil with a little salt until brown
This soup unfortunately does NOT freeze well.
Enjoy!
