Since we left Stamford Hill we haven't had any and I haven't found a recipe online for sweet arbes. Please be specific about the relative proportions - do I put the sugar in the water or just add it afterwards? Thankyou very much!

Chickpeas in the Oven:
16 oz chickpeas
10 cups water
5 Tbsp sucar
3 tsp salt
1/2 tsp black pepper
1/2 tsp crushed red pepper
Preheat oven to 500
Place chickpeas in a deep 9x13 pan. Add water and sugar. Cover tightly. Bake 45 minutes.
Reduce temp to 250, bake 2 and half hours.
Add salt, continue baking additional hour and half.
Remove from oven, drain, do not rinse.
Gently slide onto a dish towel. Add spices. Gently mix by rolling edges of dishtowel back and forth being careful not to mash chickpeas. Let cool.

1 bag of dry chick peas (I like jack rabbit)
2 tbsp salt
1 cup sugar
1/2 tsp black pepper
Soak chick peas in water the night before,
Pour off water , add water to cover, add rest of ingredients. Cook for 4 hours. Drain well using paper towel to absorb the moisture.
I use the instapot for it these days. On the bean preset
