Fruit platter comes to mind. Cakes and pastries seem heavy to me

CHEF CHAYA'S NO MIXER TORTE:
1 Cup Sugar.
1 Cup Flour.
2 Eggs.
1/2 Cup Oil.
1 TB Vanilla Sugar.
2 TSP Lemon juice.
1 TSP Baking P
Mix with a fork, don't over mix.
8", 9" or 10" round pan
Add chunks of stone fruit (I used plums).
Bake at 350 for an hour.
Serve warm with ice cream.
** I made it in a 8×8 square pan.
ETA: I missed the word "light" in your subject. But it isn't so heavy at all.

Fruit platter covered with chocolate
Or, fruit platter with chocolate fondue for dipping.
Airy pareve cheesecake.
Pears cooked in wine.

5 apples 1/2 cup sugar 1 T lemon juice
2 tsp cornstarch mixed with 2 T water 1/4 tsp cinnamon.
Combine all ingredients and cook for 10-15 minutes.
Serve warm and drizzle caramel sauce.
Serve with store bought churros, they sell in the freezer section.

Baked plums cut in Alf skin up on sheet sprinkle cinnamon and sugar bake till soft.
Compote: 1 each
Frozen strawberries
Frozen blueberries
Frozen rhubarb
Cook up with water, sugar, and vanilla

Ombré coffee gelatin
First layer vanilla almond milk, sweetner, gelatin
Second layer almond milk and coffee, sweetner, gelatin
Third layer black coffee, sweetner, gelatin
When ready flip and unmold

*Embrosia- frozen fruits blended. Put into fancy cups.
*Fruit salad- jello, can peach, mango, strawberries.
*Simple compote-blend any canned fruit, add jello.
*Baked apple or Pear served in jello.
*Razzle- blend chocolate chips, parve cream cheeze, *whip topping, drop coffee (dissolved in hot water). *Put into mini cute cups or in pie crust.
*Apple compote- cook with frozen strawberries, sugar- 1 hour.
*(Buy ready -to-bake frozen) chocolate chip cookies, put on piece of bar chocolate, another cookie or marshmallow, bake. Rewarm before serving on blech.
