you can make a lot of salads without vinegar. Lately I have been getting really into making salads with fewer ingredients that bring out the taste of one vegetable. For example, I marinate grape or cherry tomatoes and sliced onions or scallions in olive oil with a sprinklle of sea salt and sometimes garlic powder. I also have started peeling eggplant and chopping it small and roasting in in olive oil with minced garlic.

I make a corn salad - can of corn, diced red pepper, chopped onion, some salt and mayonnaise. (I usually add pickles, but not in Tishrei, and it's good anyhow.)
Also, beet salad - shredded beets, salt, pepper, garlic and mayonnaise. I usually add roasted chopped walnuts, but it doesn't really need it.
