Hi I am trying to replicate the Mr. Dipz "heavenly egplant" does anyone have any ideass of how to make it?
whenever I make cubed eggplant dip the eggplants are to hard, how do I cook them long enough/let them sit maybe that they are actually mushy and heavenly
any recipes or ideas that come out like this mr. dipz one?

I never buy dips so I have no idea what that dip is like. But to get really soft eggplant, I find it better to bake it in the oven for a long time, and you need to drizzle plenty of oil because eggplants tend to absorb the oil very quickly.

For creamy eggplant either buy the thin "Japanese" eggplant or salt the eggplant after you have cubed it as this drains the bitter liquid and also seems to tenderize the eggplant.
I put the eggplant in a colander - put a plate on top with a can and then set in the sink.
Just make sure you rinse before using as I once forgot.
