I have ground chicken (dark and breast, 1 pack each) What can I make for supper tonight that is not too complicated and does not use complicated ingredients.
I would appreciate answers fast as I really nee to make supper soon. (needs to be ready in a little more than an hour)

almost anything that you do with chopped meat, you can do with chicken. just add more flavoring.

need ideas for that other than meatballs in tomato sauce (husband doesn't go for that) and meat patties fried.

I once found a recipe on the interent for a meatload with apples and I think applesauce it was called French I think.

Country French Chicken Meatloaf Recipe

Here is a great way to use ground chicken. The apples keep it from drying out while the herbs lend flavor.
INGREDIENTS:
2 Tbsp butter
1 cup minced onion
2 diced, unpeeled Golden Delicious apples
2 cloves garlic, minced
1/2 tsp dried tarragon
1/4 tsp dried savory
2/3 cup fresh bread crumbs
2 eggs, lightly beaten
1 Tbsp grated lemon rind
2 green onions, chopped
1 tsp salt
1/2 tsp pepper
1-1/2 pounds ground chicken
1/2 cup applesauce
2 Tbsp dry bread crumbs
1 Tbsp firmly packed brown sugar
PREPARATION:
In large skillet, melt butter over med heat. Cook onion, apples and garlic, stirring occasionally, for 10 minutes, or until golden. Add tarragon and savory, cook 1 minute. Let cool 10 minutes.
In large bowl, combine apple mixture, bread crumbs, eggs, lemon rind, green onions, salt, and pepper. Gently mix in chicken. Lightly pack into greased 9 x 5-inch loaf pan, smoothing top.
Spread top of loaf with applesauce. Combine crumbs and sugar, sprinkle evenly over top.
Bake at 350 degrees F for about 1-1/4 hours, until cooked through. Broil 3 minutes, about 6 inches from heat.
Let chicken meat loaf stand 10 minutes before slicing.
Yield: 6 servings
Obviously substitute any dairy, it was yum!

How about, just guessing, saute onions, garlic, and bell pepper strips with the chicken with some herbs or spices, I don't know. If he/you like ketchup, with a little ketchup just to taste.

I have a good recipe for sweet & sour meatballs with pineapple that I serve over rice. They aren't the traditional meatballs in tomato sauce, & you can make them with ground turkey. If you want the recipe, let me know.

I take ground chicken and ground beef and prepare them separately, an egg, breadcrumbs, spices etc.. then I spread out the beef and smear apricot jam over it and then spread the chicken mixture on top and smear jam again, roll it up jellyroll style, more jam on top. bake for 2 hours and serve in slices. its yum

You could fry up in a pan with onion, garlic, vegetables and oriental seasoning (or just soy sauce and ginger like I do) and serve over rice.
season however and fill puff pastry
Tortilla soup: brown in pan with onion, add to pot with water, veg, tomatoes, cumin, chili powder and serve with strips of tortillas and a dollop of pareve sour cream.
Shepherd's pie (or maybe chicken farmer/coop's pie, hehe)
Chicken chili - beans, onions, tomato, tomato sauce, spices - serve with rice or even better pareve corn bread

I know this is too late but Kosher By Design Short on Time has a recipe for Turkey Burgers ( u can use chicken too) & it has lime juice, seasonings & is fried in a tiny bit of oil. Very quick, easy & not too fattening.
