I make sure to prepare lots of vegetables and protein ahead of time so I have it available. Friday night a spelt matzah, cooked vigors, chicken. Shabbos day a big fresh salad with techina dressing and some type of deli meat or cold grilled chicken. Fruit and nuts for a snack.

I prepare foods and treats.
Treats and desserts (most important )
Sugar free jello
Baked apples with cinnamon
Popcorn
Compote
Sugar free ice pops (can make yourself. Sugar free pudding with almond milk. Or sugar free jello and fruit drink mix with water)
Dark chocolate
Individual sized hamotzei - either matzah or whole wheat roll. It’s easiest to know I can eat the whole thing.
Veg based dips - mashed grilled eggplant with garlic, blended tomatoes with garlic
Lots of salads and variety that can easily be reused every meal or pulled out for quick snack - quinoa, farro, cabbage, Israeli salad over grilled eggplant.
Lean proteins - like grilled chicken, turkey breast
Lots of roasted veggies that can be eaten all meals. Green beans, zucchini, carrots, mushrooms.

I eat one course friday night and the other shabbos day. fruit and yogurt too!
