anyone got step by step on making a kugel.
if I make it in the oven the eggs drop to the bottom making it very unapetizing.
when I try to fry in pan I can't seem to hold it together and/ or flip it over!!
help!

here goes:
pre heat the oven to 500
in a mixing bowl, mix
8 eggs
2 tsp salt
1/2 glass seltzer
2/3 glass oil
then peel 8 potatoes (I use the loose potatoes for the kugel. if you're using the bags, use a 5 lb bag) and grate them.
mix the potatoes into the egg mixture (make sure you mix them together very well)
pour into a 9x13 pan (or the one that is a drop bigger, don't know the measurements)
bake for 1 hour

Maybe there's too much liquid? When I make potato kugel, I usually squeeze out the pot. - but then again, I make BAD pot. kugel. Maybe the oven is on too high?

The seltzer is making the egg mixture too thin, so it trickles down to the bottom before it gets a chance to set in the oven. You can try skipping the seltzer, it's not a regular ingredient. If you want to keep the seltzer, you need to add flour/potato starch to your mixture.
One other trick to help set the eggs is to pre-heat the oil in the oven before adding it to the kugel. Put the oil into your pan and put in the oven while your oven is heting up. After you mix the other ingredients very well, add the oil and mix together quickly.
I've never tried baking at 500, so I can't advise as to temperature. I do 400 for the first 30 minutes and then turn it down to 350.
It took me a year of potato kugel baking every Friday before I finally got it. So don't give up.

I'd advise adding the eggs quickly after mixing in the hot oil, not before.

try frying it in a deep pan and flipping it over inside a deep cover or another deep pan.

chosidmom - the seltzer is instead of water in the regular recipe. it makes the mixture fluffy.
and no onions or black pepper. I like it this way.
and may I add - I make THE best potato kugel!! try it, you'll see.
